A bright, zingy washed lot from Huila, Colombia. A testament to community efforts.
Timaná is an area in the south of the Huila region of Colombia. Characterised by many smallholder farms surrounded by ancient jungle, the area boasts incredible biodiversity. The community thrives on a deep coffee growing heritage, this shows in the coffee that is produced. Cherries are hand picked by experienced smallholders and brought to a central processing station. The coffee is then pulped and undergoes a 48 hour oxidation process, increasing clarity and brightness in the cup. Raised beds are used to dry the coffee, taken down to an 11% moisture content.
